Inside Dolly's, you'll find a bright, welcoming space with plenty of seating and our standout feature: a retractable roof that opens up to let the sunshine in on warmer days, creating a seamless indoor-outdoor experience.
We serve specialty coffee, herbal teas, fresh pastries, homemade sweet treats, and wholesome sandwiches made daily. Whether you're catching up with friends, taking a quiet moment for yourself, or just finished a class upstairs, Dolly’s is the perfect place to unwind.
Don’t forget to explore our shelves filled with Irish-made produce, gifts, and handmade ceramics, all carefully selected to reflect the best of local creativity.

The Studio
Above the café, our bright, sunlit studio is a warm and welcoming space for movement, connection, and calm. We host weekly yoga and Pilates classes led by an incredible group of locally based instructors; each bringing their own unique style and energy to the mat. Whether you’re new to movement or returning to your practice, our classes offer a gentle, supportive way to reconnect with your body and breath.

Private Group Classes
Planning a staff day out, wellness hen, or a group trip with friends or family? Dolly’s offers private yoga and Pilates classes tailored just for your group. Held in our bright, welcoming studio, these sessions are a unique way to relax, recharge, and spend quality time together.

Leave No Trace
Leave No Trace is an outdoor ethics programme that promotes responsible enjoyment of natural and cultural landscapes while minimising environmental and community impacts. In Ireland, the programme is led by Leave No Trace Ireland and responds to the growing pressure on outdoor spaces as more people seek recreation, wellbeing and connection with nature. Impacts such as litter, erosion, damage to vegetation, disturbance to wildlife and livestock, water pollution and strain on small communities highlight the importance of a shared ethic based on care, respect and personal responsibility.
Dolly’s in Liscannor has partnered with Leave No Trace Ireland and has completed Leave No Trace Awareness Training, becoming an official Leave No Trace Partner. This reflects our commitment to caring for the local environment and supporting responsible outdoor recreation for both visitors and the local community.
The Leave No Trace Principles
At the heart of the programme are seven principles that guide how we move through outdoor spaces:
- Plan ahead and prepare
- Be considerate of others
- Respect farm animals and wildlife
- Travel on durable ground
- Leave what you find
- Dispose of waste properly
- Minimise the effects of fire
These principles apply to everyday activities such as walking coastal paths, visiting villages, swimming, cycling or spending time outdoors.
Leave No Trace in the Burren
Practising Leave No Trace is especially important in sensitive landscapes such as the Burren, where fragile limestone habitats, rare flora, working farmland and cultural heritage coexist. The Burren & Cliffs of Moher Geopark works in partnership with Leave No Trace Ireland to reduce environmental impact while supporting sustainable tourism and local communities. By following these principles, we can help protect this unique region for locals, visitors and future generations.

Sustainability Policy
At Dolly’s Liscannor, we are committed to being a vibrant community hub that fosters local economic growth while protecting the unique heritage and natural landscape of the Burren and Cliffs of Moher UNESCO Global Geopark. We believe that by prioritising local talent and environmental stewardship, we create a more resilient business and a better destination for our guests and neighbours.
Working Together
We are committed to a collaborative approach to tourism that benefits the entire Liscannor community. We engage extensively with the Burren Ecotourism Network and Visit Clare. By providing exclusive digital content and participating in regional marketing such as the Clare Food Trail, we help position North Clare as a premier, sustainable destination while driving footfall to our neighbouring local businesses.
A Cared-for Landscape
We actively participate in conserving our natural and cultural heritage. Our team is formally trained in Leave No Trace principles, and we have developed a pesticide-free pollinator herb garden in collaboration with local horticulturists to enhance our local ecosystem.
A Well-understood Heritage
We offer quality information and interpretation to communicate our stories and the unique character of our place to guests. We showcase Liscannor’s heritage by preserving the original stone walls of our building and providing an assortment of books by local authors on the history of the Burren and the Cliffs of Moher.
Vibrant Communities
We work to ensure that tourism makes a positive social contribution, benefiting our community and our guests. We host community events such as Darkness Into Light yoga and the Liscannor Christmas Market, and we have invested in a centralised website and online booking system to provide universal access to our studio and café services.
Strengthened Livelihoods
We contribute to the local economy by maintaining and supporting local employment, by sourcing services and produce locally wherever possible, and by engaging with other businesses in promoting our region as a sustainable tourism destination. We currently source 65% of our food from Irish producers and 42.6% of our retail from Liscannor and North Clare.
Resource Efficiency
We measure and monitor our resource use to actively manage and reduce energy and waste production. We track our electricity and waste output monthly, offer a 10% discount to customers who use reusable cups, and source our coffee from Calendar Coffee, a carbon-neutral direct trade roaster.
Sustainable Management (Policy & Planning)
We have developed a Sustainability Action Plan that includes actions and targets for improvement, which are reviewed annually. This plan focuses on transitioning our supply chain to certified circular materials and expanding our digital "Local Attractions" guide to continue driving footfall to our neighbouring local businesses.
At Dolly’s, we don’t just measure our success by our growth, but by the growth of the local makers, instructors, and suppliers who flourish alongside us. Looking ahead, we plan to further eliminate single-use plastics and deepen our role as a sustainable gateway to
the beauty of the West of Ireland.
